Fruity Truffles

If you're on a sugar-free diet, a healing or detox protocol, or just looking for a healthier way to satisfy your sweet-tooth, this recipe is for you! Chocked full of nutrient dense ingredients and rounded out with healthy fats to satiate your hunger and help stabilize your blood sugar, enjoy these fruity snacks for dessert, snack time, or even for breakfast! The best part is that you can make a double batch and pop them in the fridge for later in the busy week.

Ingredients:

1 c raw walnuts

1 c raw hazelnuts

1/2 banana

1/2 to 1 c fresh berries, chopped (I used strawberries)

1/2 c shredded, unsweetened coconut, plus more for rolling

3 T chia seeds

3 T unrefined coconut oil, melted

8 medjool dates, pitted

Directions:

Place dates in food processor and pulse until smooth. If date mixture is too dry, add 1 T of water and resume processing. Add banana, berries, nuts, chia, oil, and coconut. Pulse a few times to combine, until mixed well (will have a few chunks). Line a plate with waxed paper and form tablespoon size balls with your hands. Roll balls in coconut and place on lined plate. Refrigerate for 1 hour and serve. Enjoy!
