Sweet and Tangy Cucumber Salad
/Ingredients:
3 T fresh lemon juice
3 T extra virgin olive oil
2 T apple cider vinegar
1/4 t sea salt
1/8 t fresh dill, minced
1/8 t garlic powder
1/4 c fresh cilantro, minced
2 cucumbers, peeled, seeded, and cut into thin ribbons or spiralized
1/4 c onion, chopped
3 carrots, julienned
2 T raw honey
2 T rice vinegar
1 T sesame seeds
1 T chia seeds
Optional toppings: extra chia seeds, extra sesame seeds, chopped nuts (omit if AIP), beans (omit if Paleo/AIP)
Directions:
In a large bowl, combine spiralized cucumber, onion, and cilantro. In a smaller bowl, whisk together the oil, vinegars, honey, and spices to make a dressing. Pour dressing into the larger bowl and stir to combine. Serve with optional toppings if desired.
