Berrry Creamsicles

Ingredients:

3 cups sliced fresh strawberries or other berries

1 15 ounce can coconut milk, preferably organic

3 tbsp maple syrup

1 tbsp water

Directions:

Combine the strawberries (or other berries) and 2 tbsps of the maple syrup in a high speed blender (I use a vitamix.). Add one tablespoon of water to aid in blending. In a separate bowl, mix the canned coconut milk and remaining 1 tbsp of maple syrup. Using a funnel, spoon the berry mixture and the coconut milk into the popsicle molds, beginning with the coconut milk and alternating until the mold is full. Freeze 4-6 hours or until firm. To unmold, run the bottom of the popsicle mold under warm water to aid in removal. Enjoy!
