Raw ABC Salad with Spicy Lime-Ginger Dressing
/I'm always looking for ways to incorporate more veggies into my diet, and I honestly get tired of the usual lettuce-based salads I make on autopilot. Also, because I am a nutritional work-in-progress myself, just because I have learned what foods are best for my digestion, doesn't mean I always care to eat them. This recipe features, beets, which are a superfood for improvement of the liver and gallbladder and as a blood cleanser. It also highlights a dressing made with ginger, which has long been known to aid in digestion. A little of this salad goes a long way, and it's the perfect pairing for our late-summer/early fall grilled meat dishes. This "ABC salad" was first introduced to me as part of my curriculum at the Nutritional Therapy Association. I was thrilled to finally have found a tasty way to utilize fresh beets! This is my interpretation of the raw beet, apple, carrot salad I have grown to love.
Ingredients:
2-3 medium beets (red or golden), peeled and grated (around 1.5-2 c)
3 medium carrots, peeled and grated (around 1.5-2 c)
2 medium apples (I used Gala), peeled, cored, and grated (around 1.5-2 c)
4 T fresh squeezed lime juice
1 T raw honey
3 inch piece of fresh ginger root, peeled and minced (around 1 T)
2-3 T EVOO (see source below for purchase)
