Coconut Chicken Curry
/Ingredients:
2 T unrefined coconut oil (see image below for my favorite brand)
1 can full fat coconut milk
1 large onion, diced
4 cloves garlic, minced
3 stalks celery, chopped
1 c broccoli, chopped
1/2 c zucchini, chopped
1/2 c red bell pepper, thinly sliced
2 chicken breasts, cooked and cut into bite size pieces
2 T ground coriander
1 T turmeric
1 T cumin
1 t sea salt, or to taste
1 t black pepper
2 c rice of choice, cooked
garnishes: minced cilantro, sliced avocado, sesame seeds, chopped cashews
Directions:
Chop all the vegetables and set aside. Heat oil in a large skillet on medium heat. Once heated, add the onion to the skillet and cook for 5 minutes. Add the spices and mix well. Add the broccoli, zucchini, pepper, celery, and garlic along with the chicken and coconut milk and mix well. Cover and reduce heat to medium-low. Cook approximately 15 minutes, until vegetables are softened. Serve over rice in bowls and top with desired garnishes (see above).
