Greek Vegetable Salad With Lemon Dijon Dressing
/Ingredients:
1 tbsp basil, chopped
2 (10.5 oz) containers grape tomatoes, halved
1 (14.5 oz) can garbanzo beans
2 cucumbers, seeded and chopped
2 cloves garlic, minced
2 avocados, diced
3/4 tsp Italian seasoning, dried
1/4 cup parsley, chopped
1 tsp Dijon mustard
1/4 cup lemon juice, fresh
1/4 tsp sea salt
1/2 cup olive oil
2 oz feta cheese, crumbled
Directions:
Rinse and drain the garbanzo beans and add to large bowl. Add the tomatoes, cucumber, garlic, feta, avocado, and Italian seasoning and mix well. In a smaller bowl, add the olive oil, mustard, sea salt, and lemon juice and whisk. Add to large bowl and combine well. Chill in refrigerator or serve immediately.
